l Your R&D team just ran a pilot batch. The anthocyanin-based red turned blue in your yogurt. The beta-carotene crystallized on the surface of your beverage. And your procurement manager is now questioning whether "natural" is worth the headache.

Here's the truth most suppliers won't tell you upfront: natural pigments are not drop-in replacements for synthetics. They have personalities. They react to pH, temperature, light, oxygen, and metal ions in ways that Tartrazine never will.

What this means for your formulation: 

If your product's pH is above 4.5, anthocyanins will shift toward purple or blue regardless of supplier quality. This is chemistry, not a defect. You have three options: (1) lower pH, (2) switch to beet red, or (3) use a microencapsulated anthocyanin with a protective coating.

Trying to color a clear beverage with standard beta-carotene? You'll get a ring at the neck of the bottle within 48 hours. You need an emulsified or microencapsulated form—and the particle size matters. Sub-micron emulsions (< 0.5 μm) prevent creaming; larger particles will separate.

Yes, natural colors cost more per kilo than synthetics. But here's what procurement teams miss:
